Tequila Sunrise Lamb Salad from MeatMATTERS.com

When you think of summer cocktails, Strawberry Daiquiris or Mint Mojitos may be first to spring to mind, but not all cocktails are for sipping on the beach! MeatMATTERS.com have created a unique summer cockail and the twist is it makes a great summer salad!

The new Tequila Sunrise Lamb recipe incorporates fresh oranges and pomegranate seeds with succulent lamb leg steak strips and is mixed with a dash of  tequila and grenadine. When served with crisp salad leaves in a cocktail glass you have the perfect summer salad for a romantic alfresco dinner for two or a starter for eight!

Tequila Sunrise Lamb Salad

Serves: 2


2 Lean lamb leg steaks, cut into thin strips

1 Orange, juice and rind

150ml (¼pt) Tequila

2x15mlsp (2tbsp) Grenadine syrup

1 Orange, peeled and segmented

Handful salad leaves

1 Pomegranate, seeds removed


Place lamb steak into a shallow dish; add orange juice and rind, and tequila.  Cover and marinade in fridge for 2-3 hours.

Pre-heat a griddle or frying pan, drain the lamb and reserve the marinade.  Cook in hot pan for 4 - 5 minutes until the strips are browned.

Remove the steak from the pan and add the marinade, bring to the boil and add grenadine syrup.  Reduce slightly.


Into 2 bowls layer the orange segments, salad leaves and lamb strips.  Drizzle over the hot tequila sauce and garnish with pomegranate seeds ?? drizzle with extra grenadine if you wish.
