Loin or leg steaks 1-2cm (½-¾") 12-16 minutes, turn once
Chops 2cm (¾") 16-20 minutes, turn once
  • 4 Lean pork chops or steaks
  • 5mlsp (1tsp) Cumin
  • 5mlsp (1tsp) Cinnamon
  • 2.5 (½ tsp) Ground ginger
  • 150g Pot of natural yogurt
  • Drizzle
  • 5mlsp (1tsp) Cumin
  • 5mlsp (1tsp) Cinnamon
  • (½ tsp) Ground ginger
  • 2x15mlsp (2tbsp) Olive oil
  • Salsa
  • 425g Canned mango, drained and chopped
  • 15mlsp (1tbsp) Fresh coriander, chopped
  • 15mlsp (1tbsp) Fresh parsley, chopped;
  • 1 Small red onion, sliced
  • Pinch of cumin, ginger and cinnamon
In a dish mix together the cumin, cinnamon, ginger and natural yogurt. Add the chops or steaks and mix well to coat. Cover, refrigerate and leave for 2-3 hours for the flavours to infuse.

Barbecue or grill as the timings indicate above.

Mix together the drizzle ingredients. Brush or drizzle over 4 lean pork chops or steaks during the last 2-3 minutes of cooking time.

Mix together the salsa. Serve as a fruity Moroccan salsa alongside the cooked chops or steaks

Serve with a bowl of cous cous and a large mixed salad.
