Lamb Kebab Pittas

  • 225g (8oz) Lean lamb leg steaks
  • 1 Lemon, juice and rind
  • 2 Garlic cloves, crushed
  • 2x5mlsp (2tsp) Cumin seeds
  • Pitta breads
  • 2 Tomatoes, finely diced
  • 1 Small red onion, sliced
  • 1 Garlic clove, crushed
  • 15mlsp (1tbsp) Red wine
  • 15mlsp (1tbsp) Fresh coriander, chopped
  • Black pepper
Pre-heat the grill.

Cut the lamb leg steaks into 2.5cm (1") cubes. Place the cubes in a bowl and add the lemon juice, garlic and cumin seeds. Mix well, cover and refrigerate for 15-20 minutes.

Meanwhile make the salsa. Place the tomatoes, onion, garlic, vinegar and coriander in a bowl. Season with black pepper and mix well.

Thread the lamb cubes on to skewers and cook under a pre-heated grill for 12-15 minutes, turning occasionally. Lightly toast the pitta breads.

Serving Suggestions:
Serve the lamb in the pitta breads with the tomato salsa and a green salad.
