Mini Meatballs

  • 225g (8oz) Lean minced beef
  • Frozen mixed vegetables
  • 15mlsp (1tbsp) Tomato ketchup
Pre-heat the oven.

Cook the frozen mixed vegetables(peas, sweetcorn, carrots etc) in a
microwave oven for 1-2 minutes and finely chop.

Place the lean minced beef in a bowl, add the chopped vegetables and tomato ketchup and mix well.

Shape teaspoons full of the mince mixture into about 24 balls and place onto baking tray. Cook in the oven for about 10 minutes.

Serving Suggestions:
Serve the meatballs stuffed into pitta breads with ketchup or dip of choice, potato wedges or shapes, onion or vegetable rings and salad.
