Tandoori Lamb Cutlets

  • 4-6 Lean lamb cutlets
  • 2x15mlsp (2tbsp) Tandoori or tikka curry paste
  • ½ Lemon, juice
  • 150g Pot of low fat natural yogurt
  • 15mslp (1tbsp) Fresh mint, chopped
In a bowl mix together the tandoori or tikka curry paste, lemon juice, yogurt, and fresh mint. Add the lamb cutlets and mix thoroughly. Cover and place in the refrigerator to marinate for approximately 30 minutes to 4 hours.

Remove the cutlets and place on a grill pan. Cook under a pre-heated grill for approximately 15 minutes turning occasionally.

Serving Suggestions:
Serve with vegetable rice, mini naan breads and Indian style chutneys.
