Chunks for Hunks Marinaded Chunks Gammon Kebabs with Macho Nachos

  • 450g (1lb) Chunky thick premium unsmoked gammon cut, into cubes
  • Marinade 1 - Mustard and Cider:
  • 15mlsp (1tbsp) Wholegrain Mustard
  • 150ml (¼ pt) Cider
  • Marinade 2 - Lager and Chilli:
  • 1 Red chilli, deseeded and finely chopped
  • 150ml (¼ pt) Lager
  • 15mlsp (1tbsp) Sweet chilli sauce
Place the gammon cubes in a shallow dish, add the chosen marinade ingredients and stir together well. Cover and place in the fridge for 1 hour.

Drain cubes, discard the marinade and thread the cubes onto skewers (if using wooden skewers, soak in water first to prevent burning).

Place under a pre-heated grill for 12 - 15 minutes until meat is cooked through and browning at the edges.
Serving Suggestions:
Serve with Chilli or Mustard mayo: Add to 2x15mlsp (2tbsp) mayo either 5mlsp (1tsp) mustard or 15mlsp (1tbsp) sweet chilli sauce.

And a heap of 'Macho Nachos': Cut flour tortillas into large wedges, top with tomato salsa, chopped cucumber, spring onion and coriander. Cover with grated cheese and grill.
